From Baja Surf Trips to Hawaii's Best Tacos
It all started with a board and a dream. Joseph "Joey" Fullmer spent years chasing waves along the coast of Baja, California, where he fell in love with the simple perfection of authentic Mexican taco stands — fresh fish, handmade salsas, and food made with soul.
In 2010, Joey brought that passion to Oahu's North Shore. He converted an old Kentucky Fried Chicken restaurant in Hau'ula into a Baja-style taco joint that would change the way locals and visitors thought about tacos in Hawaii. Every recipe, from the Surf Sauce to the slow-roasted meats, was perfected to capture the spirit of those coastal Mexican kitchens.
The result? Over 15 years of serving up the freshest Baja-style fish tacos on the island, earning the #1 spot for fish tacos from Sunset Magazine, and gathering more than 1,500 glowing Google reviews. What started as one small restaurant has grown to include our beloved Shark's Cove food truck, bringing our food closer to the surf breaks and beaches our customers love.

Joey founded North Shore Tacos in 2010 after years of surf trips to Baja, California inspired him to bring authentic coastal Mexican flavors to Oahu's North Shore. With over 15 years in the restaurant industry, Joey is passionate about using locally caught fish and scratch-made recipes.
Elen Corazzari
Co-Owner & General Manager
Elen co-owns and manages North Shore Tacos alongside Joey, overseeing daily operations at both the Hau'ula restaurant and Shark's Cove food truck. Her hospitality expertise and warm personality help create the welcoming atmosphere that keeps locals and visitors coming back.
