That is the standard we set back in 2010 when Joey Fullmer turned an old fried chicken joint in Hau’ula into the home of fresh fish tacos.

Why Tacos Are the Perfect Beach Party Food
Think about the last time you tried to eat a steak or a heavy plate lunch while sitting on a towel.
It usually ends with sand in your food and a balancing act on your lap.
They are hand-held. No plates are necessary, though we provide them just in case. You don’t need forks, knives, or stable tables. Guests can grab a taco and eat it standing up, sitting on a cooler, or walking along the water’s edge.
They beat the trade winds. Oahu’s trade winds typically blow at 10 to 20 mph, especially on the Windward coast. Lightweight salads and loose paper plates blow away instantly, but a taco is self-contained and heavy enough to hold its own against the breeze.
They are customizable. Your vegan friend, your kid who only eats cheese, and your uncle who wants extra hot salsa can all coexist here. Everyone builds their own taco from our spread, so you don’t have to play referee with dietary restrictions.

The Taco Bar
Best for: 20-100 guests
This is our most popular catering option for house parties and beach park gatherings. We set up a full taco bar with your choice of proteins, fresh tortillas, and all the fixings.
Includes:
- Your choice of 2-3 proteins (grilled fish, chicken, carne asada, al pastor, carnitas, shrimp)
- Flour and corn tortillas
- Baja slaw, pico de gallo, fresh guacamole
- Cilantro lime rice and black beans
- Three salsas (mild, medium, hot)
- Surf Sauce, chipotle aioli, lime crema
- Shredded cheese, sour cream, lime wedges
- Plates, napkins, and serving utensils
Add-ons:
- Loaded nachos appetizer
- Tropical drink station (Pineapple Tikis, agua frescas)
- Dessert tray (churros, tres leches cups)
The Full Fiesta
Best for: 50-200+ guests
If you want a complete celebration with zero effort on your part, this package adds service staff and appetizers.

- Loaded nachos bar as appetizer
- Burrito bowl station

The Food Truck Experience
Best for: Any size event with vehicle access
We bring our actual food truck to your location, which creates a fun, festival atmosphere. Guests order from the window just like they do at Shark’s Cove.
Requirements: Vehicle access is non-negotiable here. We need a flat parking surface and power access, or we can utilize our generator.

How to Plan Your Beach Party
Step 1: Choose Your Beach
Not all Oahu beaches allow parties, and the rules for commercial catering on public land are strict.
Here are the spots where we see the most success:
North Shore:
- Sunset Beach: Wide, beautiful, with parking, but heavy traffic on weekends.
- Hale’iwa Beach Park: Pavilions and grills are available, making it easier to set up food stations.
- Waimea Bay: stunning, but parking is often full by 8:00 AM, making catering drops difficult.
Windward:
- Kailua Beach Park: Gorgeous white sand, but you must secure a pavilion permit for large groups.
- Waimanalo Beach: Less crowded and great for larger groups, but often windier.
Important: You must check with the City & County of Honolulu Department of Parks and Recreation. Events over 50 people generally require a park use permit, and commercial activity (like a food truck selling on-site) is restricted in many public beach parking lots.
Step 2: Set Your Guest Count
Give us your best estimate at least two weeks in advance.
Food planning relies on accurate numbers, so here is the formula we use:
- Plan for 3 tacos per person as a main course.
- Add a 20% buffer for surfers and hearty eaters.
- Kids under 10 typically eat 1-2 tacos each.
Step 3: Pick Your Proteins
For most beach parties, we recommend 2-3 protein options to cover all bases.
- Crowd pleasers: Grilled chicken + beer-battered fish.
- The local favorite: Al pastor + carnitas + grilled fish.
- The premium spread: Grilled fish + shrimp + carne asada.
Step 4: Plan Your Drinks
We can provide our tropical drink station with Pineapple Tikis and agua frescas.
A note on alcohol: Hawaii state law strictly prohibits alcohol consumption on public beaches and parks. Police patrol popular spots like Lanikai and Waikiki frequently.
If you are at a private estate or vacation rental with beach access, you are in the clear.
- Our Hau’ula bar can prepare pre-batched margaritas for transport to private venues.
- Local beers (Longboard Lager, Big Wave) are always crowd pleasers.
- Plenty of water and ice is mandatory—the UV index in Hawaii often hits 11+, leading to fast dehydration.

Beach Party Tips From the Pros
After catering hundreds of beach events, we have seen what works and what fails.
Follow these rules to keep the day running smoothly:

Bring shade. Pop-up canopies are essential. Direct sunlight will wilt salads and warm up drinks in under 20 minutes, so cover the food station immediately.

Ice, ice, ice. Bring double the ice you think you need. A 20-pound bag melts surprisingly fast in 85-degree heat, especially if the cooler is opening and closing constantly.

Set up upwind. Position the food setup upwind of the sitting area. If you place the food downwind, sand kicked up by guests will blow right into the guacamole.

Bring heavy-duty trash bags. Oahu’s public bins often overflow on weekends. We believe in Malama Aina (caring for the land), so be prepared to pack out your own trash to keep the beach pristine.

Start with nachos. Guests always arrive hungry. A nachos appetizer keeps everyone happy and occupied while the main taco bar gets organized.

Plan for sunset. The best beach parties start in the late afternoon. Aim to eat around 5:30 PM so you catch the “Golden Hour” lighting for photos before the sun drops.
