The food at a wedding, retreat, or backyard party does more than fill stomachs. It sets the entire tone for the event. A stiff, formal meal changes the energy in a way that often fights against the relaxed, salty-air vibe of Oahu.

We founded North Shore Tacos in 2010 with a clear mission in mind. Joseph “Joey” Fullmer started this journey by converting an old KFC in Hau’ula into a hub for fresh, Baja-style Mexican cuisine. The goal remains to bring that same scratch-made quality directly to your venue.

Why Choose Taco Catering?

Traditional catering often forces you into a rigid box. You pick between chicken or fish months in advance, and guests get stuck with a plate they might not even finish.

Taco catering offers a flexible, high-energy alternative that aligns perfectly with the North Shore lifestyle. Recent data from 2025 wedding trends indicates a 30% shift toward “interactive dining” stations over plated meals. Here is why this format wins.

It Solves Dietary Complexities

Managing a guest list with vegan, gluten-free, and dairy-free requirements is usually a logistic headache. A taco bar eliminates that stress instantly.

Corn tortillas are naturally gluten-free. Beans, rice, and fresh salsas provide a hearty meal for vegans without requiring a separate “special meal” ticket. Your guests with restrictions feel like part of the group rather than an afterthought.

Interactive Food Sparks Connection

The act of building a taco breaks the ice. Guests stand together at the salsa bar, recommending the mango salsa or debating the heat of the hot sauce.

This movement keeps the energy high. Instead of being stuck at a table for 90 minutes, people mingle, eat at their own pace, and return for seconds.

The “Freshness” Factor

Most wedding food is cooked hours before it hits the table and sits in a warmer. That kills the flavor.

We cook our proteins fresh. The fish—often local Mahimahi or Ono—comes off the grill hot. Our salsas are chopped daily using local ingredients like Kahuku tomatoes and sweet onions. You can taste the difference between a warmer-tray chicken breast and a taco made thirty seconds ago.

Event Types We Cater

Weddings

Hawaii remains the top destination wedding location in the U.S., hosting over 20,000 weddings annually. Couples fly here for the aloha spirit, not for a stuffy ballroom dinner.

We specialize in venues that embrace the outdoors, such as Loulu Palm, Kualoa Ranch, and private estates along the coast. The wind and salt air of the North Shore require a catering setup that understands the elements.

What we provide:

  • Full Taco Bar: Three premium proteins cooked to perfection.
  • Appetizer Station: Fresh chips, salsa, and scratch-made guacamole to welcome guests.
  • Tropical Hydration: Pineapple Tikis, agua frescas (like watermelon or hibiscus), and lemonade.
  • Uniformed Staff: Professional team members in North Shore Tacos shirts handle setup and service.
  • Menu Signage: Clear labeling for all items so guests know exactly what they are eating.

Popular wedding combos:

  1. The Premium Trio: Grilled fresh catch (Mahimahi/Ono), Carne Asada, and Garlic Shrimp.
  2. The Crowd Pleaser: Al Pastor (pork), Carnitas, and Grilled Chicken.
  3. The Balanced Choice: Grilled Fish, Chicken, and a dedicated Fajita Veggie mix.

Insider Tip: Wind is a major factor on the North Shore. We use heavyweight serving ware and wind-resistant chafing setups to ensure napkins and tortillas stay exactly where they belong.

Luaus

A real luau is about community and abundance. Our catering brings the flavors of a fiesta and merges them with island hospitality.

What makes our luau catering special:

  • Fusion Flavors: Mango and pineapple salsas that bridge Mexican cuisine with Hawaiian ingredients.
  • Local Catch: Fresh Hawaiian fish serves as the centerpiece.
  • Signature Drinks: A tropical drink station featuring our famous Pineapple Tikis.
  • Aesthetic Fit: The setup looks natural in a backyard, beach park, or pavilion.

Ideal for: This package works best for graduation parties (a huge deal in Hawaii), first birthdays (Baby Luau), and family reunions.

Corporate Events

Corporate retreats on Oahu are moving away from boardrooms and onto the beach. Companies like Google, GoPro, and various surf brands have hosted events on the North Shore to disconnect and recharge.

We facilitate that relaxation with food that requires zero pretension.

Why it works for business:

  • Networking Friendly: The taco bar format encourages employees to stand and talk while grabbing food.
  • Speed of Service: We can feed 100 people in under 30 minutes, keeping your agenda on track.
  • Budget Efficiency: You get premium, fresh food at a cost significantly lower than hotel banquet rates.

Our Catering Process

Planning an event on an island can be logistically tricky. The following process ensures nothing falls through the cracks.

Step 1: Initial Consultation (Free)

Reach out to us via phone or email. You can also visit us in Hau’ula to chat in person.

Please have these details ready:

  • Event date and start time.
  • Venue location (Private estate, beach park, or rental).
  • Estimated guest count.
  • Budget parameters.

Step 2: Custom Proposal

We generate a comprehensive quote within 48 hours. This document breaks down per-person food costs, staffing fees, and tax.

Transparency is our policy. You will never see a surprise “cake cutting fee” or “corkage fee” on our invoices.

Step 3: Menu Tasting (Optional)

Large events deserve a test run. We invite wedding couples and event planners to our Hau’ula location to sample the menu.

This is your chance to try the salsas and decide between the Carne Asada or the Carnitas. Feedback allows us to dial in the spice levels to your crowd’s preference.

Step 4: Event Day Execution

Our team operates like a military unit on the day of the event.

Frequently Asked Questions

What are the power requirements? We are self-sufficient for the most part. However, if your event goes into the night, we may need access to a standard 110v outlet for lighting the buffet line.

Do you handle trash removal? Our team removes all trash generated by our catering service. We bag it and haul it away so you aren’t left with a pile of salsa-covered plates at the end of the night.

How far in advance should I book? Popular dates fill up fast. We recommend booking 2-3 months out for weddings, especially for summer dates (June-August). Small parties can often be booked with 2 weeks’ notice.

Can you serve at beach parks? Yes. However, Hawaii state laws prohibit commercial activity on certain public beaches without a permit. Check with your venue or permit office to ensure your location allows outside catering.

Book Your Event

The best events are the ones where the host actually gets to enjoy the party. Let us handle the fire and the food while you handle the fun.
